Syn Free Overnight Oats | Slimming World Recipe

As a fellow Slimming World follower.. I also went totally bonkers over this awesome breakfast. It feels so naughty and it’s so easy to make. Not forgetting the fact it’s totally Syn free too!

This recipe works well because it avoids using your daily Healthy Extra A allowance by not having to use milk. Leaving it to be used elsewhere.

Ingredients:

40g Unflavoured Porridge oats (6 Syns if not using at a healthy extra)
200g Fat free natural yogurt (or try a flavoured Muller Light)
Mixed berries, Strawberries, Raspberries (Frozen fruit works really well because it defrosts in the fridge)

Method:

  • Start with a small layer of yogurt in the bottom of your jar, then a layer of porridge, then a layer of fruit. Repeat until the jar is full.
  • Cover the jar and leave overnight in the fridge to allow the porridge to absorb the yoghurt.
  • Serve for breakfast in the morning.

Other speed fruits that work really well are: Bananas, Oranges, Pear, Apple, peaches etc. Try apple and a pinch of Cinnamon it’s delicious.

These Airtight Jars work really well for this recipe.

Creating A Perfect Syn Free Poached Egg | Slimming World Recipe

If you are anything like me you will pretty much live on eggs when following the Slimming World plan. Eggs being syn free is a savior for me. I will often eat 3 or 4 eggs per day. Whether it be scrambled, boiled, fried or poached I just love eggs. If I do say so myself however.. I am pretty good at cooking a poached egg and I am always being asked how I do it.. Well here we go.

Ingredients:

1 Egg
Boiling water
1 Sauce pan or frying pan
1 Slotted spoon
1 Small bowl or ramekin
Kitchen towel

Method:

  • Bring around 2 inches of water to boil in a non stick pan. Pure metal pans are the worst to cook a poached egg in as the egg sticks to the sides. Once the water is boiling turn down the heat to a gentle simmer.
  • Crack your egg into a small bowl or ramekin.
  • Pour your egg into the simmering water quickly.
  • Do not touch the egg, do not worry if the egg looks rough.. a poached egg is not always perfect.
  • If you like your poached egg soft/runny allow 2 minutes cooking time. If you like your egg harder allow around 3 to 4 minutes cooking time.
  • To remove your egg uses a slotted spoon to lift gently and allow the water to run out.
  • Place onto some kitchen towel to dry off before serving.

The general rule is the fresher the egg the better it will poach.. but using vinegar is a complete myth you do not need it.

The best thing about a casserole is you can usually bung anything into it.. any extra vegetables you have lurking around just chuck it all in.. remember it’s all about “Speed” 😉 I am always struggling with Slimming World meal ideas but I do love a good casserole. When Slimming World finally released some Syn free sausages I was made up! Finally a good old Sausage casserole 😉 This recipe will serve 2 people.

1 Small leek
5 Tbsp frozen peas

1 Tbsp chopped parsley
1/2 Tsp dried mixed herbs
1 Garlic clove (or 1 Tsp garlic granules)
1 x 400g Chopped tomatoes
200ml Vegetable stock
Salt and Pepper
Frylight

Method:

1.  Finely chop carrots and leek and par boil them for 4-5 minutes.
2. Slice mushrooms and finely chop onion.
3. Spray a little Frylight into a non stick pan and cook your onion in the garlic for a few minutes. Add the sausages and brown them.
4. Make up 200ml of vegetable stock.
5. Add sausages, carrot, mushroom, leek, peas, sausages, parsley, dried mix herbs, parsley, pinch of salt and pepper, chopped tomatoes and vegetable stock into a casserole dish.
6. Cover and baked in the oven for 50-60 minutes on 180c ensuring the sausages are cooked.

Alternatively you can use the slow cooker  3-4 hours on high or 5-6 hours on low. Ensure sausages are cooked through before serving.

If you don’t already have a slow cooker I HIGHLY recommend this amazing slow cooker from Crock Pot.

IMG_7918

The best thing about the CSC026 Crock-Pot slow cooker is the saute pan which can even be used on an induction hob and stored in fridge or freezer too.

I will be honest the main reason I went for this slow cooker is because I wanted it to fit in with our White/Grey kitchen theme but it turns out it really is an amazing product.

My old slow cooker was cheap and didn’t even have a timer on it. It’s definitely worth paying a little extra for a quality classy looking product.

It’s great for creating loads of wonderful Slimming World recipes and saves so much time when cooking.

If you fancy purchasing one of these you can have a look here

When I cook I always substitute oil with Frylight 1 Cal Spray. This spray is Syn free and it’s a HUGE healthy alternative to oil. I find the cheapest place to purchase this from is Home Bargains as its always on offer at around £1.45. But often it’s on offer in Iceland and other Supermarkets.
