There’s nothing like a chunky slice of refreshing, thirst-quenching watermelon on a hot day. While a regular slice of watermelon is perfectly good, it’s also fun to spice it up sometimes. The best thing about this recipe is the kids can get involved too. It looks really pretty and is so versatile you can use any fruit to top.

Ingredients

  • 1 Large Watermelon
  • Pinch Cracked Black Pepper
  • 1 Lime or tbsp Lime Juice
  • 200g Fat Free Greek Style Yoghurt
  • 100g Quark
  • Your choice of fruit to top with: We have used Blueberries, Strawberries, Raspberries and Blackberries.

Instructions

  • Using a very sharp knife slice watermelon into Pizza type slices. Lay out in a pizza style on a board or plate.
  • Pop yoghurt, quark, black pepper and a squeeze of lime juice into a bowl. Whisk for a few minutes until you have a thickened mixture.
  • Pop the yoghurt on top of the pizza slices and then top with your choice of fruit.
