Equipment

  • 4 Skewers [Wooden or Metal]

Ingredients

  • 500g Boneless, skinless chicken breast or thigh [Diced]
  • 2 Cloves Garlic [Crushed]
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Coriander
  • 1 tsp Cayenne Pepper [Adjust to taste]
  • 1 tsp Turmeric
  • ½ tsp Salt
  • Juice 1 Lemon
  • Zest 1 Lemon
  • 2 tbsps Fat Free Greek Yoghurt

Instructions

Marination of the chicken

  • In a large bowl, crushed garlic, ground cumin, smoked paprika, ground coriander, cayenne pepper, turmeric, salt, lemon juice, lemon zest, and Greek yogurt.
  • Add the diced chicken to the marinade, stir ensuring each piece is well-coated. Cover the bowl with cling film and let it marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavour.

Cooking the kebabs

  • Remove the marinated chicken from the refrigerator and thread the cubes onto skewers.
  • Air Fry: Place the chicken skewers in the air fryer basket, ensuring they are not overcrowded to allow proper air circulation.Cook at 180°C (400°F) for approximately 12-15 minutes, turning the skewers halfway through the cooking time.
  • Oven: Place the skewers on a baking sheet and bake at 200°C (180°C fan) for approximately 20-25 minutes or until the chicken is cooked.
