500gBoneless, skinless chicken breast or thigh[Diced]
2Cloves Garlic[Crushed]
1 tspGround Cumin
1 tspSmoked Paprika
1 tspGround Coriander
1 tspCayenne Pepper[Adjust to taste]
1 tspTurmeric
½ tspSalt
Juice1 Lemon
Zest1 Lemon
2 tbspsFat Free Greek Yoghurt
Instructions
Marination of the chicken
In a large bowl, crushed garlic, ground cumin, smoked paprika, ground coriander, cayenne pepper, turmeric, salt, lemon juice, lemon zest, and Greek yogurt.
Add the diced chicken to the marinade, stir ensuring each piece is well-coated. Cover the bowl with cling film and let it marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavour.
Cooking the kebabs
Remove the marinated chicken from the refrigerator and thread the cubes onto skewers.
Air Fry: Place the chicken skewers in the air fryer basket, ensuring they are not overcrowded to allow proper air circulation.Cook at 180°C (400°F) for approximately 12-15 minutes, turning the skewers halfway through the cooking time.
Oven: Place the skewers on a baking sheet and bake at 200°C (180°C fan) for approximately 20-25 minutes or until the chicken is cooked.
