There really is only around 15 minutes of prep and then you let the slow cooker do the hard work. Make more, then freeze some, and you’ll have an even easier meal next time! Ingredients

  • 500g Skinless Boneless Chicken Thighs [Each Sliced into 3 or 4 pieces]
  • 1 Large Onion [Peeled, Diced]
  • 400g Tinned Chopped Tomatoes
  • 400ml Chicken Stock
  • 1 tbsp Lemon Juice
  • 3 tbsp Tomato Puree
  • 3 Garlic Cloves [Crushed]
  • 1 Green Chilli [Deseeded, Thinly Sliced]
  • 10 Baby Tomatoes [Sliced in half]
  • 1 tsp Dried Coriander
  • 2 tsp Turmeric
  • 3 tsp Garam Masala
  • 3 tsp Cumin
  • 1 tsp Hot Curry Powder
  • 3 tsp Paprika
  • Pinch Salt
  • 1 tbsp Granulated Sweetener

Instructions

  • Literally chuck everything (other than the baby tomatoes) into the slow cooker.
  • Combine and stir until everything is mixed together and covered well.
  • Cook on low for 5 hours or high for 3 hours. Remove the lid and throw in the baby tomatoes for the final hour.
