300gNew Potatoes[Cubed]
1Small Onion[Peeled, Finely Diced]
6Large Eggs
105gCheddar Cheese[Grated]
100mlWhole Milk
PinchSalt and Pepper

Pop the cubed potatoes into a pan with a teaspoon of salt and cover with boiling water. Bring back to the boil, turn down and cook for 5 minutes or until cooked. [Even better if you have some cold potato left over from another meal this would save you time]
Cooking the onions can be done in two ways:In a pan: Spritz a pan with cooking spray, add the onion over a medium heat and cook until soft.In an air fryer: Pop into the air fryer on 180c for 5 minutes.
Crack the eggs into a bowl with the milk and pinch of salt and pepper. Whisk the eggs with a whisk or fork. Stir in the onion and potato. Then add the cheese and combine with a fork.
Pour into a pan over a medium heat and cook for 10 minutes both sides.
