Ingredients

  • 500g Lean Diced Beef
  • 500g Carrots [Peeled, Sliced]
  • 1 Onion [Peeled, Diced]
  • 1 Clove Garlic [Minced]
  • 200g Frozen Peas [Defrosted]
  • ½ tsp Smoked Paprika
  • 500ml Beef Stock
  • 1 tsp Dried Thyme
  • 2 Bay Leaves
  • Salt and black pepper to taste
  • Low Calorie Cooking Spray

Instructions

Slow Cooker Method:

  • Preheat a non-stick frying pan with low calorie cooking spray and sear the beef until browned on all sides.
  • Add the beef, carrots, onions, garlic, smoked paprika, thyme, and bay leaves to the slow cooker.
  • Pour over the beef stock, stir well, and cover.
  • Cook on low for 6-8 hours or high for 4-5 hours until the beef is tender.
  • 30 minutes before the end of cooking, stir in the peas.
  • Season with salt and black pepper to taste before serving.

Oven Method:

  • Preheat the oven to 160°C (fan 140°C) / Gas Mark 3.
  • Heat a non-stick frying pan with low calorie cooking spray, brown the beef on all sides, and transfer to an ovenproof casserole dish.
  • Add the carrots, onions, garlic, smoked paprika, thyme, and bay leaves. Pour over the beef stock and stir well.
  • Cover tightly with a lid and cook in the oven for 2.5-3 hours, stirring halfway through.
  • 20 minutes before the end of cooking, stir in the peas.
  • Season with salt and black pepper before serving.
