Ingredients
800gCarrots[Peeled, Chopped]
1Large Onion[Chopped]
2Garlic Cloves[Minced]
1litreVegetable Stock
1tspGround Coriander
1handfulFresh Coriander[Chopped]
Low-calorie cooking spray
Salt and pepper, to taste
Instructions
Spray a large saucepan with low-calorie cooking spray and place over a medium heat.
Add the chopped onion and garlic, cooking for 3-4 minutes until softened. Add a little water if it sticks.
Stir in the ground coriander and a splash of water. Cook for another minute to release the flavours
Add the chopped carrots and pour in the vegetable stock. Bring to the boil, then reduce the heat and simmer for 20 minutes or until the carrots are tender.
Remove the soup from heat and allow it to cool slightly. Then, blend until smooth using a hand blender or food processor. Stir in the fresh coriander and blend again.
Season with salt and pepper to taste.
Soup Maker Instructions:
Add the chopped carrots, onion, garlic, ground coriander, and vegetable stock directly into the soup maker. Select the 'Smooth' setting and start the machine. (If your soup maker doesn’t have a smooth setting, cook until the carrots are soft, then blend.) Once finished, stir in the freshly chopped coriander and season with salt and pepper to taste.
