  • 1 Large Onion [Chopped]
  • 2 Garlic Cloves [Minced]
  • 1 litre Vegetable Stock
  • 1 tsp Ground Coriander
  • 1 handful Fresh Coriander [Chopped]
  • Low-calorie cooking spray
  • Salt and pepper, to taste

Instructions

  • Spray a large saucepan with low-calorie cooking spray and place over a medium heat.
  • Add the chopped onion and garlic, cooking for 3-4 minutes until softened. Add a little water if it sticks.
  • Stir in the ground coriander and a splash of water. Cook for another minute to release the flavours
  • Add the chopped carrots and pour in the vegetable stock. Bring to the boil, then reduce the heat and simmer for 20 minutes or until the carrots are tender.
  • Remove the soup from heat and allow it to cool slightly. Then, blend until smooth using a hand blender or food processor. Stir in the fresh coriander and blend again.
  • Season with salt and pepper to taste.

Soup Maker Instructions:

  • Add the chopped carrots, onion, garlic, ground coriander, and vegetable stock directly into the soup maker. Select the 'Smooth' setting and start the machine. (If your soup maker doesn’t have a smooth setting, cook until the carrots are soft, then blend.) Once finished, stir in the freshly chopped coriander and season with salt and pepper to taste.
