Ingredients

  • 1 large head of broccoli [chopped into florets]
  • 100g fresh spinach leaves
  • 2 medium potatoes [peeled and diced]
  • 2 celery stalks [chopped]
  • 1 large onion [diced]
  • 2 garlic cloves [crushed]
  • 750ml vegetable stock
  • 100ml skimmed milk [use part of your Healthy Extra A]
  • Salt and pepper to taste
  • A pinch of nutmeg [optional]

Instructions

  • Heat a large saucepan over medium heat and spray with low-calorie cooking spray. Add the onion, garlic, and celery, and cook for 5-6 minutes until softened.
  • Add the potatoes and broccoli to the pan, followed by the vegetable stock. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the vegetables are tender.
  • Add the spinach and cook for another 2-3 minutes until the spinach wilts.
  • Blend the soup with a hand blender until smooth. Stir in the skimmed milk, then season with salt, pepper, and a pinch of nutmeg if using.
  • Serve immediately, or store in the fridge for up to 3 days. This soup freezes well, so it’s perfect for meal prepping.
