Ingredients
1large head of broccoli[chopped into florets]
100gfresh spinach leaves
2medium potatoes[peeled and diced]
2celery stalks[chopped]
1large onion[diced]
2garlic cloves[crushed]
750mlvegetable stock
100mlskimmed milk[use part of your Healthy Extra A]
Salt and pepper to taste
A pinch of nutmeg [optional]
Instructions
Heat a large saucepan over medium heat and spray with low-calorie cooking spray. Add the onion, garlic, and celery, and cook for 5-6 minutes until softened.
Add the potatoes and broccoli to the pan, followed by the vegetable stock. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the vegetables are tender.
Add the spinach and cook for another 2-3 minutes until the spinach wilts.
Blend the soup with a hand blender until smooth. Stir in the skimmed milk, then season with salt, pepper, and a pinch of nutmeg if using.
Serve immediately, or store in the fridge for up to 3 days. This soup freezes well, so it’s perfect for meal prepping.
