Instructions
For the Slow Cooker Beef
Place your slow cooker on a sturdy surface and set it to the low-heat setting.
In a large pan over medium-high heat, heat a few sprays of low-calorie cooking spray. Add the beef meat and sear until browned on all sides, about 3-4 minutes. This step is optional but can enhance the flavor of the dish.
Throw everything into the slow cooker and mix together.
Cover the slow cooker with its lid and cook on the low-heat setting for 7-8 hours. This slow cooking process will make the beef tender.
About 30 minutes before serving, taste the stew and adjust the seasoning if needed. You can add more salt, pepper, or herbs to suit your preference. If there is a lot of liquid at this point, you can leave the lid off for the remaining cooking time.
For Mashed Potato
Place the peeled and cubed potatoes in a large pot of cold water. Bring the water to a boil over high heat. Reduce the heat to medium-low, sprinkle in 1 stock cube, stir and simmer for about 15-20 minutes or until the potatoes are fork-tender.
Drain the cooked potatoes in a colander. Give them a bit of a bash about either in the pan or colander.
Return the drained potatoes to the pot. Use a potato masher or a hand mixer to mash the potatoes to your desired level of smoothness.
While mashing, add minced garlic, salt, and black pepper to taste. Mix these ingredients thoroughly into the potatoes.
Whisk in the yoghurt with a fork. Taste and add more salt and pepper if needed.
Serve together with your delicious slow cooked beef.
