Boil the sweet potato cubes for 10-12 minutes until soft. Drain and mash.
Meanwhile, in a frying pan, spray low-calorie cooking spray and fry the onion and garlic for 5 minutes until softened.
Add cumin seeds, garam masala, turmeric, and chilli flakes. Cook for 2 minutes.
Stir in the mashed sweet potato and frozen peas. Season with salt and pepper. Remove from heat and allow to cool.
Preheat oven to 200°C (180°C fan)/Gas Mark 6 or preheat air fryer to 180°C.
Assemble the Samosas:
Place a spoonful of the sweet potato mixture in the middle of each sheet of filo pastry. Fold into a triangle and keep folding along the strip to form a samosa shape.
Brush with beaten egg to seal.
Oven Method:
Place each samosa onto parchment paper lined baking tray. Spritz with Low Calorie Cooking Spray.
Bake for 25 minutes until golden and crispy.
Airfryer Method:
Place each samosa into the Airfryer. Do not stack. Spritz with Low Calorie Cooking Spray.
Air fry at 180°C for 15 minutes, turning halfway through for even crispiness.
