Ingredients

  • 4 Sheets of Filo Pastry
  • 2 Medium Sweet Potatoes (about 400g) [Peeled, Cubed]
  • 1 Small Onion [Peeled, Diced]
  • 1 Clove Garlic [Minced]
  • 1 tsp Ground Cumin
  • 1 tsp Garam Masala
  • ½ tsp Turmeric
  • ½ tsp Chilli Flakes
  • 100g Frozen Peas [Defrosted]
  • Low-Calorie Cooking Spray
  • Salt and Pepper to taste
  • 1 Beaten Egg [For Glazing]

Instructions

Prepare the Filling:

  • Boil the sweet potato cubes for 10-12 minutes until soft. Drain and mash.
  • Meanwhile, in a frying pan, spray low-calorie cooking spray and fry the onion and garlic for 5 minutes until softened.
  • Add cumin seeds, garam masala, turmeric, and chilli flakes. Cook for 2 minutes.
  • Stir in the mashed sweet potato and frozen peas. Season with salt and pepper. Remove from heat and allow to cool.
  • Preheat oven to 200°C (180°C fan)/Gas Mark 6 or preheat air fryer to 180°C.

Assemble the Samosas:

  • Place a spoonful of the sweet potato mixture in the middle of each sheet of filo pastry. Fold into a triangle and keep folding along the strip to form a samosa shape.
  • Brush with beaten egg to seal.

Oven Method:

  • Place each samosa onto parchment paper lined baking tray. Spritz with Low Calorie Cooking Spray.
  • Bake for 25 minutes until golden and crispy.

Airfryer Method:

  • Place each samosa into the Airfryer. Do not stack. Spritz with Low Calorie Cooking Spray.
  • Air fry at 180°C for 15 minutes, turning halfway through for even crispiness.
