Piri Piri Pork Kebabs

It's BBQ season here and these Piri Piri pork kebabs wowed the whole family tonight and they were so easy to throw together. Spicy, tangy and full of flavour this recipe is perfect for anyone following the Slimming World plan or trying to change their diet.

Equipment

  • Metal Kebab Skewers

Ingredients

  • 2 Pork Loin Steaks  [Remove all visible fat, Diced into chunks]
  • Vegetables of your choice [Sliced into chunks]
  • Low calorie cooking spray

Marinade Ingredients:

  • 1 tbsp Tomato Puree
  • 100g Fat free natural yoghurt
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Lemon Juice
  • 1 tbsp Paprika
  • ½ tsp Smoked Paprika
  • ½ tsp Oregano
  • ½ tsp Ground Ginger
  • 1 tsp Ground Garlic
  • Pinch Salt
  • 1 tbsp Water

Instructions

Marinating the pork:

  • Literally throw all of the marinade ingredients into a bowl and mix together well.
  • Put the pork into the marinade and stir until the pork is fully coated.
  • Pop into an airtight container or cover the bowl with plastic cling.
  • Leave in the fridge for at least 3 hours or preferably overnight. The longer you can leave the pork the better it will taste.
  • Once the pork is ready to cook push them onto skewers with alternative slices of veggies.

Cooking in air fryer:

  • Grease the air fryer baskets and place in the kebabs.
  • Spritz the kebabs with low carlorie cooking spray.
  • Cook for 10 minutes, turn each kebab and then cook for a further 5 minutes. Check the pork is cooked through before serving.

Cooking in the oven:

  • Preheat oven to 200c/Gas Mark 6/Fan 180c.
  • Grease a baking tray and place the kebabs on to the tray.
  • Spritz the kebabs with low carlorie cooking spray.
  • Place into the oven for 15 - 20 minutes, tuning half way.

Cooking on the bbq:

  • Spritz the kebabs with low carlorie cooking spray.
  • Place onto a hot BBQ, turn often until the pork is cooked through.
