350gBeef stir fry strips[or upgrade and use rump steak]
1Yellow Pepper[De seeded, sliced]
1Red Pepper[De seeded, sliced]
1Onion[Peeled, Diced]
400gTin Kidney Beans[Drained]
2tspPaprika
½tspSmoked Paprika
1tspCayenne Pepper
1tspHot Chilli Powder
1Beef Stock Cube[Use a gluten free stock cube if needed]
1Garlic Clove[Crushed]
400gChopped Tomatoes
250gPassata
1 tbspTomato Puree
Frylight/Low calorie cooking spray
Instructions
Spritz a pan with Frylight and place over a medium heat.
Add pepper and onion to the pan and cook for a few minutes until softened.
Add kidney beans. tomato puree, chopped tomatoes and pasta to the pan.
Stir in all of the herbs and spices and allow to simmer for 5 minutes.
Add the beef and simmer (not boil) for a further 15 minutes or until most of the liquid has gone and the beef is cooked.
