Ingredients
400gLean beef steak [thinly sliced into strips, all visible fat removed]
Prepare the beef: Toss the beef strips in a bowl with the cornflour and Chinese five-spice until evenly coated.
Cook the beef: Heat a non-stick frying pan or wok over high heat and spray with low-calorie cooking spray. Fry the beef strips in batches for 2–3 minutes on each side until browned and crispy. Remove from the pan and set aside.
Cook the vegetables:Spray the pan with a little more cooking spray and add the red pepper and onion. Stir-fry for 3–4 minutes until softened but still crisp.
Make the sauce:In a small bowl, mix the soy sauce, tomato puree, honey, beef stock, garlic, chilli, and vinegar. Pour this into the pan with the vegetables and bring to a simmer.
Combine:Add the crispy beef strips back into the pan and toss to coat them evenly in the sauce. Cook for another 2 minutes until everything is heated through and the sauce thickens slightly.
