400gLean Pork[Trimmed of all visible fat, cut into bite-sized pieces]
1Red Bell Pepper[De-seeded, Sliced]
1Medium Onion[Peeled, Diced]
100gGreen Beans[Trimmed. Quartered]
1Medium Carrot[Peeled, Thinly sliced]
1tspNigella Seeds
3tbspLight Soy Sauce
2tbspTomato Puree
2tbspRice Vinegar
2tbspHoney
1tbspCornflour[Mixed with 2 tbsp cold water]
1Clove Garlic[Crushed]
½ tspGinger Powder
100mlWater

Instructions
Prepare the pork:Heat a large non-stick frying pan or wok over medium heat and spray with low-calorie cooking spray. Add the pork and cook until browned on all sides. Remove from the pan and set aside.
Cook the vegetables:Spray the pan again with cooking spray. Add the onion, carrot, green beans, and red bell pepper. Stir-fry for 5-7 minutes until the vegetables are tender but still slightly crunchy. Sprinkle in the nigella seeds and stir for an additional minute.If the vegetables start to stick add a little water.
Make the sauce:In a small bowl, whisk together the soy sauce, tomato puree, rice vinegar, honey, garlic powder, ginger powder, and water. Pour the sauce mixture into the pan with the vegetables.
Thicken the sauce:Stir the cornflour and water mixture into the sauce. Bring it to a simmer and cook for 1-2 minutes until the sauce thickens.
Combine and serve:Return the pork to the pan and toss everything together, ensuring the pork is coated in the sticky sauce. Simmer for another 3-4 minutes until the pork is cooked through.
Serve:Divide into four portions and enjoy with steamed rice, noodles, or your favorite Slimming World-friendly alternative.
