Ingredients

  • 4 Skinless, Boneless Chicken Breasts
  • Low Calorie Cooking Spray
  • 2 Garlic Cloves [Minced]
  • 1 Onion [Finely Diced]
  • 100ml Chicken Stock
  • 100g Lightest Cream Cheese [Room Temperature]
  • 15g Sun-dried Tomatoes in oil [Drained and Chopped]
  • 50g Fresh Spinach
  • 1 tsp Dried Italian Mixed Herbs
  • Salt and Pepper to taste

Instructions

  • Spray a large non-stick frying pan with low-calorie cooking spray and place over medium heat.
  • Season the chicken breasts with salt, pepper, and half the Italian herbs. Add to the pan and cook for 5–6 minutes each side until golden and cooked through. Remove from the pan and set aside.
  • In the same pan, add more cooking spray if needed. Sauté the chopped onion and garlic for 2–3 minutes until softened.
  • Add the chicken stock and sun-dried tomatoes. Let it simmer for a couple of minutes, then stir in the light cream cheese until melted and combined into a creamy sauce.
  • Stir in the spinach and remaining herbs. Cook until wilted, about 2 minutes.
  • Return the chicken to the pan and spoon the sauce over. Let it simmer for another 2–3 minutes to absorb all those lovely flavours.
