Batch Cooking & Storage Guide
These spicy beef fajitas are a brilliant option for batch cooking, making weeknight meals quick, easy, and full of flavour. You can double or even triple the recipe without any extra effort, then portion it out for lunches or speedy dinners throughout the week.
Fridge
Once cooked and cooled, store the fajita mixture in an airtight container in the fridge for up to 3 days. Reheat thoroughly in a frying pan or microwave until piping hot. If the mixture looks a little dry after chilling, simply add a splash of water or beef stock to bring it back to life.
Freezer
To freeze, allow the cooked fajita mix to cool completely before transferring into freezer-safe containers or bags. Freeze for up to 2 months. Defrost fully in the fridge overnight before reheating until piping hot throughout. For best results, freeze only the beef and veg mixture and add fresh wraps, salad, or yoghurt when serving.
Can This Recipe Be Adapted?
Absolutely—this spicy beef fajita recipe is really flexible, so you can tweak it depending on what you’ve got in the fridge or how you like your meals.
If you want to change up the protein, you can easily swap the beef for lean chicken breast, turkey strips, or even Quorn pieces for a veggie version. Just adjust the cooking time slightly depending on what you use.
You can also bulk it out with extra vegetables such as mushrooms, courgette, or sliced carrots to make it go even further without adding any swips. If you prefer a milder flavour, simply reduce the chilli and cayenne pepper, or for extra heat, add more fresh chilli or a pinch of crushed chillies.
For serving, you can keep it completely swip free by enjoying it on its own or over salad, or use your Healthy Extra allowance for wholemeal wraps if you want the full fajita experience.
