I first made this coleslaw when I was living in Lanzarote and we had visitors for a week… I wanted to make sure they went home feeling full of delicious BBQ food, so of course being the perfect host I made a huge vat of this stuff. Back then coleslaw, potato salad etc. weren’t really readily available to purchase on the island so I used to make things like this from scratch. Anyway long story short, one of our visitors was absolutely obsessed with the coleslaw… he literally ate it with everything!!

Creamy Coleslaw
Ingredients
- ½ White Cabbage [quartered, cored and finely shredded]
- ½ Red Cabbage [quartered, cored and finely shredded]
- 1 Apple [cored, peeled, very finely chopped]
- 3 Carrots [Very finely sliced]
- 1 Onion [Red or White, grated]
- 200g Fat free natural yoghurt
- 1 tsp Lemon Juice
- ¼ tsp Colemans Mustard Powder
- ¼ tsp Garlic Granules
- Pinch Salt
Instructions
- Literally throw every thing into a bowl and mix together. Easy peasy and tastes amazing!
