Best Ever Leftover Chicken Noodle Soup
Ingredients
- 500 g boneless skinless chicken thighs [or leftover cooked chicken, shredded]
- 200 g Uncooked Dried egg noodles
- 2 large carrots [peeled and sliced]
- 1 large onion [finely chopped]
- 2 cloves garlic [minced]
- 2 litres chicken stock
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Low Calorie Cooking Spray
Instructions
Prepare the Vegetables:
- Heat low calorie cooking spray in a large pot over medium heat.
- Add chopped onions and garlic, sauté until onions are translucent.
- Add sliced carrots and continue to sauté for another 3-4 minutes until carrots begin to soften.
Cook Chicken:
- If using raw chicken thighs, add them to the pot and cook until browned on all sides.
- If using leftover cooked chicken, skip this step and proceed to the next.
Add Stock and Seasonings:
- Pour in the chicken stock, dried thyme, salt, and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes to allow flavours to meld.
Cook Noodles:
- Add the thick egg noodles to the pot and cook according to package instructions until they are al dente.
Shred Chicken:
- If using raw chicken, remove the cooked chicken thighs from the pot, shred the meat using two forks, and return it to the soup.
- If you are using leftover chicken, add this here and simmer for a further 5 minutes
