Best Ever Spanish Tortilla | Slimming World Friendly Recipe

This delicious Spanish tortilla recipe is a real classic and so simple. Also known as tortilla espanola, this easy potato omelette is so filling and very satisfying. This recipe is perfect for anyone who is following the Slimming World plan, Weight Watchers or a calorie deficit. 

I have a challenge for you… Name a dish that can be eaten as a snack, a starter, breakfast, lunch, main course and the kids will love it too. Can be eaten cold or hot, is perfect in lunch boxes, served in restaurants and can be made with huge a few ingredients. Any idea? It is a Spanish Tortilla of course! One of my most favourite dishes and my kids love it too! (and trust me they are fussy)

Spanish Tortilla

Ingredients

  • 300g New Potatoes [Cubed]
  • 1 Small Onion [Peeled, Finely Diced]
  • 6 Large Eggs
  • 105g Cheddar Cheese [Grated]
  • 100ml Whole Milk
  • Pinch Salt and Pepper
  • Low Calorie Cooking Spray

Instructions

  • Pop the cubed potatoes into a pan with a teaspoon of salt and cover with boiling water. Bring back to the boil, turn down and cook for 5 minutes or until cooked.
    [Even better if you have some cold potato left over from another meal this would save you time]
  • Cooking the onions can be done in two ways:
    In a pan: Spritz a pan with cooking spray, add the onion over a medium heat and cook until soft.
    In an air fryer: Pop into the air fryer on 180c for 5 minutes.
  • Crack the eggs into a bowl with the milk and pinch of salt and pepper. Whisk the eggs with a whisk or fork. Stir in the onion and potato. Then add the cheese and combine with a fork.
  • Pour into a pan over a medium heat and cook for 10 minutes both sides.
  • Serve and enjoy.
