Ingredients

For the Slow Cooker Beef

  • 500g Stewing/Casserole Beef
  • 1 Large Onion [Diced]
  • 2 Garlic Cloves [Crushed]
  • 400ml Beef Stock [Use 2 stock cubes]
  • 400g Canned Chopped tomatoes
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Paprika
  • Pinch Salt
  • Low Calorie Cooking Spray

For Mashed Potato

  • 6 Medium Sized White Potatoes [Peeled, Cubed]
  • 1 Chicken or Vegetable Stock Cube
  • 1 Garlic Clove [Minced]
  • 2 tbsp Fat Free Natural Yoghurt
  • Salt and Pepper

Instructions

For the Slow Cooker Beef

  • Place your slow cooker on a sturdy surface and set it to the low-heat setting.
  • In a large pan over medium-high heat, heat a few sprays of low-calorie cooking spray. Add the beef meat and sear until browned on all sides, about 3-4 minutes. This step is optional but can enhance the flavor of the dish.
  • Throw everything into the slow cooker and mix together.
  • Cover the slow cooker with its lid and cook on the low-heat setting for 7-8 hours. This slow cooking process will make the beef tender.
  • About 30 minutes before serving, taste the stew and adjust the seasoning if needed. You can add more salt, pepper, or herbs to suit your preference. If there is a lot of liquid at this point, you can leave the lid off for the remaining cooking time.

For Mashed Potato

  • Place the peeled and cubed potatoes in a large pot of cold water. Bring the water to a boil over high heat. Reduce the heat to medium-low, sprinkle in 1 stock cube, stir and simmer for about 15-20 minutes or until the potatoes are fork-tender.
  • Drain the cooked potatoes in a colander. Give them a bit of a bash about either in the pan or colander.
  • Return the drained potatoes to the pot. Use a potato masher or a hand mixer to mash the potatoes to your desired level of smoothness.
  • While mashing, add minced garlic, salt, and black pepper to taste. Mix these ingredients thoroughly into the potatoes.
  • Whisk in the yoghurt with a fork. Taste and add more salt and pepper if needed.
  • Serve together with your delicious slow cooked beef.

    Can this be done in a casserole dish on low in the oven instead of a slow cooker?
