Ingredients
- 500g Lean Diced Beef
- 500g Carrots [Peeled, Sliced]
- 1 Onion [Peeled, Diced]
- 1 Clove Garlic [Minced]
- 200g Frozen Peas [Defrosted]
- ½ tsp Smoked Paprika
- 500ml Beef Stock
- 1 tsp Dried Thyme
- 2 Bay Leaves
- Salt and black pepper to taste
- Low Calorie Cooking Spray
Instructions
Slow Cooker Method:
- Preheat a non-stick frying pan with low calorie cooking spray and sear the beef until browned on all sides.
- Add the beef, carrots, onions, garlic, smoked paprika, thyme, and bay leaves to the slow cooker.
- Pour over the beef stock, stir well, and cover.
- Cook on low for 6-8 hours or high for 4-5 hours until the beef is tender.
- 30 minutes before the end of cooking, stir in the peas.
