Carrot & Coriander Soup
Equipment
- Hand blender or food processor
Ingredients
- 800g Carrots [Peeled, Chopped]
- 1 Large Onion [Chopped]
- 2 Garlic Cloves [Minced]
- 1 litre Vegetable Stock
- 1 tsp Ground Coriander
- 1 handful Fresh Coriander [Chopped]
- Low-calorie cooking spray
- Salt and pepper, to taste
Instructions
- Spray a large saucepan with low-calorie cooking spray and place over a medium heat.
- Add the chopped onion and garlic, cooking for 3-4 minutes until softened. Add a little water if it sticks.
- Stir in the ground coriander and a splash of water. Cook for another minute to release the flavours
- Add the chopped carrots and pour in the vegetable stock. Bring to the boil, then reduce the heat and simmer for 20 minutes or until the carrots are tender.
- Remove the soup from heat and allow it to cool slightly. Then, blend until smooth using a hand blender or food processor. Stir in the fresh coriander and blend again.
- Season with salt and pepper to taste.
Soup Maker Instructions:
- Add the chopped carrots, onion, garlic, ground coriander, and vegetable stock directly into the soup maker. Select the 'Smooth' setting and start the machine. (If your soup maker doesn’t have a smooth setting, cook until the carrots are soft, then blend.) Once finished, stir in the freshly chopped coriander and season with salt and pepper to taste.
