Batch Cook – Storage Information

If you’re planning to batch cook Cauliflower Steaks with Herby Sauce, here’s how you can store and reheat them to maintain freshness and flavour:

Storage Instructions:

  1. Cauliflower Steaks:

    • After roasting the cauliflower steaks, allow them to cool completely.
    • Store them in an airtight container in the fridge for up to 3 days.
    • If you’d like to store them for longer, you can freeze them. Place the cooled cauliflower steaks on a baking sheet and freeze them individually before transferring them to a freezer bag or airtight container. They can be frozen for up to 1 month.
  2. Herby Sauce:

    • The herby sauce can be prepared in advance and stored separately. Keep it in an airtight container in the fridge for up to 3 days.
    • For longer storage, you can freeze the herby sauce in small portions (e.g., ice cube trays) and defrost as needed.

Reheating Instructions:

  1. For Cauliflower Steaks:

    • Oven Method: Preheat your oven to 180°C (160°C fan) or 350°F. Place the cauliflower steaks on a baking tray and heat for 10-15 minutes, until warmed through and slightly crispy again.
    • Microwave Method: Place the cauliflower steaks on a microwave-safe plate and cover with a damp kitchen towel. Microwave on medium heat for 2-3 minutes, or until heated through. Note: the microwave will not re-crisp the cauliflower, but it will warm it nicely.
  2. For Herby Sauce:

    • If stored in the fridge, the sauce can be used straight from the container.
    • If frozen, defrost the sauce in the fridge overnight or heat it gently in the microwave for 30-60 seconds before drizzling over the cauliflower steaks.

Can This Recipe Be Adapted?

Herby Sauce Variations

  • Add Spice: To give the herby sauce a bit of a kick, add chilli flakes, cayenne pepper, or even some finely chopped fresh chillies.
  • Dairy-Free Option: If you’re following a dairy-free diet, you can swap the Greek yoghurt for a dairy-free alternative like coconut yoghurt or silken tofu for a creamy texture.
  • Different Herbs: Experiment with different herbs such as basil, mint, or thyme for a unique twist. Adding a bit of garlic or lemon zest to the sauce can also add extra depth of flavour.

Use Different Cooking Methods

  • Grill or BBQ: If you’re looking for a smokier flavour, try grilling or barbecuing the cauliflower steaks instead of roasting them. Simply brush them with the seasoning and cook on the grill or BBQ for around 10-12 minutes, turning once.
  • Air Fryer: For a quicker and slightly crispier result, cook the cauliflower steaks in an air fryer at 180°C for about 15 minutes, flipping halfway through.

Different Sauces

  • If you’re not keen on the herby sauce, you could try a tomato-based sauce with herbs, a spicy harissa dressing, or even a tahini sauce. Each of these would bring a different flavour profile to the dish.

Make it a Full Meal

  • Grains: Serve the cauliflower steaks with a side of quinoa, brown rice, or couscous for a more filling meal.
  • Salads: Pair with a fresh salad, such as a mixed greens salad, cucumber and tomato salad, or roasted beetroot and walnut salad.
  • Mashed Potatoes or Sweet Potatoes: For something heartier, serve the cauliflower steaks alongside mashed potatoes or sweet potatoes.
