Ingredients

  • 4 Skinless Chicken Breast
  • 2 Garlic Cloves [Minced]
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 200ml Passata
  • 4 tbsp Tomato Puree
  • ½ tsp Cayenne Pepper
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 2 tbsp White Vinegar
  • 2 tbsp Honey
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Mustard Powder
  • ½ tsp Onion Powder

Instructions

  • In a small saucepan, add the passata, tomato puree, white vinegar, honey, Worcestershire sauce, mustard powder, smoked paprika, garlic, onion powder, ground cumin, cayenne pepper, pepper and salt.
  • Whisk together and bring to a gentle simmer over low heat for 5-7 minutes, stirring occasionally until thickened.
  • Remove from heat and set aside to cool.

Slow Cooker Method:

  • Add the chicken and the sauce previously set aside into the slow cooker.
  • Cook on low for 6 hours or high for 4 hours.
  • Once cooked, shred the chicken using two forks and stir well to coat in the sauce.

Oven Method:

  • Preheat the oven to 180°C (160°C Fan/Gas Mark 4).
  • Add the chicken and the sauce previously set aside into a cooking dish.
  • Cover the dish with foil and bake for 45 minutes or until the chicken is tender.
  • Shred the chicken and mix with the sauce before serving.
