Sweet & Sour Sticky Pork
Ingredients
- 400g Lean Pork [Trimmed of all visible fat, cut into bite-sized pieces]
- 1 Red Bell Pepper [De-seeded, Sliced]
- 1 Medium Onion [Peeled, Diced]
- 100g Green Beans [Trimmed. Quartered]
- 1 Medium Carrot [Peeled, Thinly sliced]
- 1 tsp Nigella Seeds
- 3 tbsp Light Soy Sauce
- 2 tbsp Tomato Puree
- 2 tbsp Rice Vinegar
- 2 tbsp Honey
- 1 tbsp Cornflour [Mixed with 2 tbsp cold water]
- 1 Clove Garlic [Crushed]
- ½ tsp Ginger Powder
- 100ml Water
- Low Calorie Cooking Spray
Instructions
- Prepare the pork:Heat a large non-stick frying pan or wok over medium heat and spray with low-calorie cooking spray. Add the pork and cook until browned on all sides. Remove from the pan and set aside.
- Cook the vegetables:Spray the pan again with cooking spray. Add the onion, carrot, green beans, and red bell pepper. Stir-fry for 5-7 minutes until the vegetables are tender but still slightly crunchy. Sprinkle in the nigella seeds and stir for an additional minute.If the vegetables start to stick add a little water.
- Make the sauce:In a small bowl, whisk together the soy sauce, tomato puree, rice vinegar, honey, garlic powder, ginger powder, and water. Pour the sauce mixture into the pan with the vegetables.
- Thicken the sauce:Stir the cornflour and water mixture into the sauce. Bring it to a simmer and cook for 1-2 minutes until the sauce thickens.
- Combine and serve:Return the pork to the pan and toss everything together, ensuring the pork is coated in the sticky sauce. Simmer for another 3-4 minutes until the pork is cooked through.
- Serve:Divide into four portions and enjoy with steamed rice, noodles, or your favorite Slimming World-friendly alternative.
