Right… my kiddos hate their greens! My littlest used to love broccoli but a few months ago his older brother told him they were mini trees and if he ate them a tree would grow in his tummy! (yeah cheers little dude) So now I have to hide it.. so here I bring you “eat your greens soup” perfect for adults and kiddos who think veg is YUCK!
Broccoli and spinach form the base of this soup, bringing plenty of fibre, vitamins, and minerals, while keeping the calories low. Potatoes add a natural creaminess and make the soup extra filling, and celery provides a subtle savoury note that complements the other flavours beautifully.

You’ll be able to enjoy all the creaminess you love without the added fat or syns of traditional cream-based soups.

- Switch up the potatoes: Swap regular potatoes for sweet potatoes or butternut squash to add a different flavour and texture while still keeping it creamy.
- Add protein: Stir in cooked chicken, turkey, or even some lentils or chickpeas to make the soup heartier and more filling.
- Spice it up: Add a pinch of chilli flakes, cumin, or curry powder for a flavour twist and a bit of heat.
- Make it chunkier: If you prefer a chunkier texture, blend only half the soup and leave some pieces of broccoli and potato for extra bite.
- Go dairy-free: You can omit the skimmed milk or replace it with a dairy-free alternative like almond or oat milk if you’re avoiding dairy.
